Following on from the growing retail trend experienced over the past couple of years, the catering expert, Heritage Portfolio, has introduced an extensive brunch menu into the corporate world.
Predicted to be the biggest hospitality trend across private and corporate dining this year, brunch has become much more than a fashionably late breakfast. By introducing this brand-new option across its Conference & Events venues in Scotland, the award-winning caterer expands its offering for prospective clients with everything from large all-day conferences to breakfast meetings.
The new menu, created by Chef Paul Hood, offers a variety of gourmet plates for an uplifting start to the business day or alternatively, as a great finale to an overnight stay after a wedding. It gives a contemporary twist to brunch favourites such as pancakes and kedgeree and promises bold flavours as well as an unusual icebreaker to get conversations started. Dishes are served individually to provide a truly unique experience, allowing guests to sample all the different tastes.
Each element on the plate has been carefully considered allowing it to stand on its own. Highlights include:
- Cajun spiced American style pancake, smashed avocado, poached duck egg, coriander dust and lemongrass syrup
- Haddock kedgeree scotch egg, curried cauliflower curd, puffed rice cracker and dill dust
- Maple and popcorn flatbread topped with peanut butter yogurt, caramelised banana, blueberry and malt syrup
Paul has also developed vegan alternatives to ensure there is something for everyone. Freshly squeezed herb, vegetable and fruit juices accompany the mouth-watering menu which can be tailored to suit requirements.
